Safe Turkey Cooking

We get a lot of questions on how to cook Turkey. You should cook to 165 degree Fahrenheit internal temperature. USE A MEAT THERMOMETER! poke the legs and the breasts every 30 minutes after the 1st hour but be careful not to touch the bones. when it is around 145 take the lid or foil off to help the skin crisp up. NO it does not take 6 or 7 hours to cook a turkey like our grandmothers thought it did. At 160 or 165 you can take it out of the oven and put on a rack or towels on the counter as it will continue to cook for up to 30 minutes after it comes out of the oven. I like to apply a rub to the bird before I put it in the over consisting of olive oil, paprika, poultry seasoning, sea salt, ground pepper corns, and some rose merry.
